The recipe for the Aviation was first published in 1916 and made famous by its inclusion in Harry Craddock's Savoy Cocktail Book in 1930. The original cocktail resembled the sky thanks to the inclusion of crme de violette. Our version continues to play with the drink's appearance by clarifying the lemon juice and steeping butterfly pea flowers into the crme de violette. Served chilled without aeration or citrus, your server or bartender will add clarified lemon juice to transform a sunny blue sky into a sunset pink.
