Clarified Cosmo

Why do so many people like Cosmos? Because they're delicious! While we generally avoid using vodka in cocktails (due to its neutrality), in this case it serves as a suitable vehicle carrying the lemon peel/oil notes we want into our Cosmo. To achieve this we put the vodka and lemon peels through a sous vide infusion. We juice cranberry in house and clarify it along with the lime juice using our culinary centrifuge. The tartness and acidity of these juices is balanced with Combier D'orange Liqueur.
