Created in 2009 by bartender Giuseppe Gonz‡lez at Clover Club in Brooklyn, the Trinidad Sour turned cocktail convention on its head. Drawing its name from the island home of the House of Angostura in Trinidad and Tobago, it reimagines bitters not as an accent but as the foundation - a full ounce or more of the island's famed aromatic elixir. The result is a drink both daring and balanced: baking spice and clove from the Angostura meet our house-made almond lemongrass orgeat and the bold, savory edge of Rittenhouse Rye. It's a cocktail that broke the rules and never looked back - bitter at heart, yet warm and generous in spirit, lingering long after the last sip.
